Low Carb Pizza

This is very easy and VERY tasty.  Even my young adult daughters ate slices.  My only complaint is that it is not easy to eat without a fork.   The recipe can be found at:

 Ingredients:

Crust

  • 1 (8 oz.) package of full fat cream cheese (room temp.)
  • 2 eggs
  • Freshly ground black pepper
  • Garlic powder
  • 1/4 cup grated parmesan cheese

Pizza

  • A pinch of cayenne pepper
  • 1/2 teaspoon oregano
  • 1 cup shredded mozzarella cheese
  • Sauteed pepperoni
  • Garlic powder

Directions:

Crust

  1. Preheat oven to 350.
  2. Butter a 9×13 baking dish
  3. Blend cream cheese and eggs and season with pepper & garlic powder
  4. Add parmesan cheese and stir until combined
  5. Pour into buttered baking dish
  6. Bake for 17 minutes or until golden brown
  7. Let crust cool for 10 minutes before adding toppings

Pizza

  1. After crust is cooked, raise oven to 400 degrees
  2. Mix together marinara sauce, garlic powder, cayenne pepper & oregano
  3. Top crust with marinara and spread evenly
  4. Top with mozzarella cheese
  5. Add toppings
  6. Bake for 8 minutes or until cheese is bubbly

One pie is pepperoni only.  The other is pepperoni, banana peppers and onions.  I found another recipe for a stiffer crust.  See pics….ImageImage

Lindt Chocolate

Lindt’s!!!!
WHYYYYYYYYYY???????  did a wonderful, thoughtful, colleague give me a beautiful (HUGE) gift of Lindt’s chocolate?????  She meant well, but, these are my weakness and trigger.  There is NO way I can keep these any where near me.  I am very grateful for the thought, but I have to quietly re-gift.  In a hurry!

 
On another note, I am still plugging along. Shook up my system with good carbs this weekend.  No regrets.  I am trying to jumpstart a loss my any means necessary.

After all this time…. nearly half a century, I have believed the number on the scale. It could make me or break me….well no more. Today I learned that INCHES really do matter! At the urging of a weight loss buddy, I took my measurements for the first time since my beginning measurements 6 weeks ago. Lo and behold, I was down a few inches from top to bottom.  Being skeptical, I first asked my husband. He said matter of factly, “we lose inches as we lose fat.”  Well, I wanted to know WHY I’m losing fat, but the scale doesn’t reflect ANY Kind of loss. I went on a quest to find out.
